1.      Vanilla Ice Cream Homemade

We don’t want to boast, but this is the best vanilla ice cream recipe we’ve found. It might also be the simplest, with only four components.


  • 2 cups heavy whipping cream
  • 1 cup sugar
  • 2 teaspoons vanilla extract


  • Stir together all of the ingredients until the sugar is completely dissolved.
  • Fill the ice cream machine cylinder to no more than two-thirds capacity; freeze according to manufacturer’s instructions.
  • Serve right away or keep in the freezer in sealed containers.

2.      Rice Pudding Leftovers

This rice pudding is a wonderful classic made with leftover cooked rice. We like to add English toffee bits, chocolate, and toasted coconut to it as well.


  • 2 cups cooked long-grain rice
  • 2 cups whole milk
  • 3 tablespoons plus 1 teaspoon sugar
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract
  • Optional: whipped cream, cinnamon, and dried cranberries


  • Mix all ingredients in a saucepan.
  • Cook, stirring frequently, over medium heat until the sauce has thickened, about 20 minutes.
  • Remove from the heat and mix in the vanilla extract. Fill serving bowls halfway with the sauce. Warm the dish before serving.
  • Top with whipped cream, cinnamon, and dried cranberries, if preferred.

3.      Sweet Potato Pie

This sweet potato pie is smooth and lightly flavored, and it slices nicely! We recommend preparing a couple of sweet potato pies to share with friends and family during the holidays.


  • Dough for single-crust pie
  • 2 medium sweet potatoes (about 1-1/2 pounds), peeled and cubed
  • 1/3 cup butter, softened
  • 1/2 cup sugar
  • 2 large eggs
  • 3/4 cup evaporated milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt


  • Preheat the oven to 425 degrees Fahrenheit. Roll out the dough to a 1/8-inch thick circle on a lightly floured surface and transfer to a 9-inch pie plate.
  • In a pan, put sweet potato and add water. Boil and mash them until they become smooth.
  •  Mix in the eggs thoroughly. Mix in the milk, two cups mashed sweet potatoes, vanilla, cinnamon, nutmeg, and salt until thoroughly combined. Pour into the pie crust. Reduce heat to 350°F and bake for 35-40 minutes, or until set or a knife inserted in the center comes out clean. Allow cooling on a wire rack. Keep any leftovers refrigerated.

4.      Cookies for Sweethearts

Two years in a row, these fruit preserves-filled rounds won blue ribbons at the county fair. They’re a family favorite that never lasts past December 25th!


  • 3/4 cup butter, softened
  • 1/2 cup sugar
  • 1 large egg yolk, room temperature
  • 1-1/2 cups all-purpose flour
  • 2 tablespoons raspberry or strawberry preserves
  • Confectioners’ sugar, optional


  • Preheat the oven to 350 degrees Fahrenheit. Cream the butter and sugar together in a mixing basin. Mix in the egg yolk thoroughly. Hand-stir in the flour. Knead the dough for 2-3 minutes on a lightly floured surface, or until fully incorporated.
  • Make 1-inch balls out of the dough. Place on buttered baking pans 2 inches apart. Make an indention in the center of each using the end of a wooden spoon handle. 1/4 teaspoon preserves in each cup
  • Bake for 13-15 minutes, or until gently browned around the edges. Place on wire racks to cool. If desired, dust heated cookies with confectioners’ sugar. Cool.

5.      Peanut Butter Pudding

This layered dessert will appeal to people of all ages. If you want it to be even nuttier, use chunky peanut butter, and if you don’t like cashews, use your preferred nut instead.


  • 1/2 cup cold butter
  • cubed 1-1/2 cups
  • chopped cashews
  • Softened 1/3 cup creamy peanut butter
  • 1 cup confectioners’ sugar
  • 1 carton (12 ounces) frozen whipped topping
  • Divided 2-2/3 cups cold 2% milk
  • Chocolate pudding mix 1 package (3.4 ounces)
  • Coarsely chopped


  • Preheat the oven to 350 degrees Fahrenheit. In a food processor, combine the flour and butter; cover and process until the mixture resemble coarse crumbs. Pulse a few times to include 1 cup of cashews.
  • In a greased 13×9-inch baking dish, press the dough. Bake for 25-28 minutes, or until golden brown. On a wire rack, cool fully.
  • Cream together the cream cheese, peanut butter, and confectioners’ sugar in a small mixing dish until smooth. 1 cup whipped topping, folded in Pour over the crust.
  • Whisk milk and each pudding mix for 2 minutes in a separate bowl. Allow for 2 minutes of soft-set time. Cover with a layer of cream cheese.
  • Finish with the rest of the whipped topping. Sprinkle the remaining cashews and the chopped candy bar. Before serving, cover and chill for at least 1 hour.

6.      Ginger Cookies, Big and Soft

These soft, lightly spiced ginger cookies are ideal for those who enjoy the flavor of ginger but aren’t fond of crispy gingersnaps.


  • 3/4 cup butter, softened
  • 1 cup sugar
  • 1 large egg, room temperature
  • 1/4 cup molasses
  • 2-1/4 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon baking soda
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • Additional sugar


  • Cream the butter and sugar together in a large mixing basin until light and creamy. In a separate bowl, whisk together the egg and molasses. Combine the flour, ginger, baking soda, cinnamon, cloves, and salt in a mixing bowl; gradually add to the creamed mixture and thoroughly combine.
  • Roll the dough into 1-1/2-inch balls and then roll them in sugar. Place 2 inches apart on baking pans that haven’t been greased.
  • Preheat the oven to 350°F and bake for 10-12 minutes, or until puffy and gently browned. Allow cooling on wire racks.

7.      Everyone’s favorite – Brownies

What if I told you that you don’t need two different dishes to create brownies, and you don’t even need to melt chocolate or chocolate chips with butter? It only takes one bowl and five minutes to put everything together to make the best brownies you’ve ever had in your life.


  • 1/2 cup unsalted butter
  • melted and HOT 1 tablespoon cooking oil
  • superfine sugar
  • 2 large eggs
  • 2 teaspoons
  • pure vanilla extract 1/2 cup
  • All-purpose (or plain) flour 1/2 cup
  • Cocoa powder 1/4 teaspoon
  • Salt


  • Preheat the oven to 350 degrees Fahrenheit.
  • Using cooking oil spray, lightly coat an 8-inch square baking pan.
  • In a medium-sized mixing basin, combine the hot melted butter, oil, and sugar. For about a minute, whisk vigorously. Beat in the eggs and vanilla extract until the mixture is lighter.
  • Combine flour, cocoa powder, and salt in a sifter.
  • Pour the batter into the prepared pan and even out the top.
  • Bake for 20-25 minutes, or until the brownies in the pan no longer wobble and are firm to the touch. When testing fudge-textured brownies with a toothpick, the toothpick should come out dirty.
  • Remove from the oven and cool completely before slicing into 16 brownies.
